FLATOW: We've got some scientific advice on how to get the most bang out of your bubbly. Hmm. Tastes good. Up next, we're poring over the science of bubbles. Here are some facts to whet your appetite. Lipstick and champagne, they clash chemically. Frosted beer mugs, a no-no for flavor. And if you want to keep that open champagne fizzy, corking is not the answer. What is the answer? Well, here to explain is bubble master Dr. Richard Zare. He is professor of chemistry at Stanford University in Palo Alto, California. Welcome back to SCIENCE FRIDAY. Happy New Year.

DR. RICHARD ZARE: Well, thank you, Ira. Same to you.

FLATOW: Thank you very much. Let's go through some of these bubbleology(ph) tips for us. Do you have any tips for getting the most flavor and fizz out of champagne?

ZARE: Well, it turns out that as it warms up, you get more volatiles that come off when it evaporates. And that's, of course, very enjoyable because most of our taste comes from smell, not actually from inside our mouth.

FLATOW: So let it warm up a little bit before you drink that icy stuff.

ZARE: That's right. This also actually applies to beer, Ira. Let me mention some things. Many people drink beer just from the bottle. And while I understand how quickly that is to take in the beer that way, because as I mentioned to you, smell is involved, you just don't get much smell when you put a bottle to your mouth. Much better is to drink beer from a glass. Now, what type of glass? Well, many bars serve frosted glasses. They think that's quite fancy and wonderful. But actually, I think that's a bad idea, as does my friend Norman(ph) Metzger(ph) in Washington, D.C., who pointed this out to me. It turns out that if you cool liquids that contain gases, they really - the liquids dissolve the gases better and they - it is the gas coming off the liquid, which is part of the aroma, which makes, again, beer be so enjoyable to many of us. Now I understand that on a very hot day, nothing like a really cold beer. But in terms of taste, sipping from a glass that's cool is really quite wonderful.

FLATOW: Hmm. Now I understand, as I said before, I understand that as for lipstick, lipstick will kill the bubbles?

ZARE: Well, the bubbles are held together by this sort of membrane of various things that surround the carbon dioxide that's making the bubble. And when you add something like too much detergent, somebody doesn't really wash out the glass well or some people even rub their nose and then put their finger down.

(LAUGHTER)

ZARE: And this kills bubbles. And the oils - any type of oil, including the ChapStick, Vaseline, et cetera, will actually cause the bubbles to burst. It really destroys the surface tension - makes it uneven and the bubbles burst this way. So it's very interesting to see and it's very obvious on New Year's Eve, generally, women have less bubbles in their glass of champagne than men do for the obvious reason that women generally wear lipstick. On the other hand, this thing I just told you doesn't always work, because just like you can have second-hand smoke, Ira, you can have second-hand lipstick.

(LAUGHTER)

ZARE: So try it out.

FLATOW: I'll tell you. What a pick-up line for New Year's Eve. I am doing a scientific survey of the lipstick around here. Let me ask you a few questions about your lipstick and your champagne. There's an opening.

(LAUGHTER)

FLATOW: All right. Let's talk about having that open - you've now opened our bottle of champagne. You want to save a little bit for the morning after. What's the best way to save it? I know you have done experiments about the best way to keep the bubbles in a bottle of champagne fizzy til the next morning.

ZARE: Well, actually, Hal McGee and I - he's the Curious Cook who wrote a column for the New York Times with that subtitle, I think - looked into this. And the truth is the best way gas dissolved in your liquid is to keep the liquid cold. Anybody who's played around with water knows as you start to heat it up, it really drives the gases off. And hot water is much flatter and - so is any hot - any liquid. And it releases gas that way. So you really - to keep your champagne effervescent, you want to keep it cold. So returning it to the refrigerator or keeping it in an ice bucket is just the right thing to do.

FLATOW: You don't have to put the cork back in it or anything like it?

ZARE: You actually do not. There's enough carbon dioxide in the champagne to go on for many days. We've seen that. There's something else that's interesting that happens. If you leave the champagne uncorked, just like with wine, you get a change in its taste due to some oxidation from the air. And that actually can be quite pleasant too.

FLATOW: I bet you have spent many hours verifying that.

ZARE: Oh, it requires it. All in the name of science, Ira.

FLATOW: Of course.

(LAUGHTER)

FLATOW: But what about that trick of sticking a spoon down the neck of the champagne? Is that all just an old wives' tale?

ZARE: Well, from what I could tell, the only effect the spoon has, like a silver spoon is, if it helps cool the bottle down when you put it back in the refrigerator. Otherwise, I don't think it works.

FLATOW: Now, let's talk about the bubbles in your glass of champagne or your glass of wine because there's a whole bunch of physics going on there, isn't there? Let me start with...

ZARE: Well, a lot of chemistry too.

FLATOW: Of course. You're a chemist. You would be saying that.

(LAUGHTER)

ZARE: Let's consider how the bubbles get there in the first place or what goes on in champagne. I think it all starts with this Frenchman by the name of Dom Perignon who lived about 1639 to 1715 and developed this thing called the methode champenoise, where you take some type of wine and you bottle it again with sugar and yeast that causes second fermentation. And this yeast converts the sugar into carbon dioxide and ethanol - the alcohol we enjoy drinking. And he also, of course, have other things that are leftover from this. You get a couple of grams per liter of different other materials, like glycerol and tartaric acid and lactic acid, and it turns out that champagne is actually acidic. It has a PH of about three.

FLATOW: Wow.

ZARE: But if you look at the amount of carbon dioxide that's in the champagne, it's immense. You know, at sea level, the pressure of the air is one atmosphere. The amount of carbon dioxide in the bottle of champagne when you opened it, is something like seven atmospheres. It's loaded. It's super saturated. It wants to come out. And here's the problem: How do you get bubbles that come out? One of the same questions about how do you get clouds to rain. You need some form of nucleation, something to happen. And I need to tell you that most of champagne is actually just water, and water loves water.

Water loves water so much that it crushes little bubbles and you don't see bubbles ever form in the middle of a glass of champagne the same way you don't see bubbles form when you boil a pot of water and you look at it. The bubbles do not form in the center of the liquid. Instead, they form on the walls, on the side. Why? Because they need to hide and grow to a critical size. And they tend to actually form on various forms of, well, shall I call it dirt, fibers, dust, scratches in the glass, places to hide and build up to be a big enough bubble so we can escape and not be crushed by the water.

FLATOW: Hmm. Let me just interrupt for a second to remind everybody. I'm talking with Dr. Richard Zare on SCIENCE FRIDAY from NPR.

So that's why you see them forming in lines. They've been lining up in crack on the glass or they're coming off the sides and, I guess, you can revise or revive a stale glass of beer by nucleating it.

(LAUGHTER)

ZARE: Well, one of the simplest ways, but I don't recommend it of seeing this effect is to dump in a tablespoon of either sugar or salt into a carbonated beverage. You'll see a great deal of foam being formed.

FLATOW: Wow.

ZARE: Sand will work too. I don't recommend any of those three.

(LAUGHTER)

FLATOW: Well, does that explain why - in soft drinks, like, root beer, which has a lot of fizz inside of it? When you make a root beer float and you pour it on the ice cream, it just explodes with foam because the ice cream has all those little nooks and crannies in it?

ZARE: Yes. And ice cubes too. Let me talk about ice cubes for a moment.

FLATOW: Please.

ZARE: Have you ever noticed that when you pour any carbonated beverage on ice cubes for the first time, lots of foam. You drink it, then you say, I want a refill. The next time people pour on the ice - the same ice cubes, right?

FLATOW: Right.

ZARE: Much less foam. It's not that the bottle has gone flat. It's that the - all the sharp spots on the ice, the asperities on the ice have melted away. And without these little nooks and crannies, again, the carbon dioxide doesn't know how to escape. It wants to escape. It wants to go to one atmosphere. It just doesn't know how.

FLATOW: That would explain why I have heard about bartenders sprinkling some salt in your beer to make it foam up again.

ZARE: It does.

(SOUNDBITE OF LAUGHER)

FLATOW: Yeah.

ZARE: But try it. It works in champagne and beer. But I don't think that for purpose of taste is the thing to do.

FLATOW: Not at all. Now, let's talk about one of the - I once saw a video that you created about bubbles in a glass of beer that they don't always go up. The bubble seemed to be going down, and you tried this with what? And you...

ZARE: It was actually with Guinness beer.

FLATOW: Guinness? Famous for all those bubbles in there.

ZARE: That's right.

(LAUGHTER)

ZARE: And it's - at first, quite a puzzle and you wonder if people reported that the bubbles on the sides of Guinness - glass of Guinness beer were going down. How could bubbles be going down? Is it that they just had too much beer to drink? What's happening here?

FLATOW: Yeah.

ZARE: What's actually happening is that everywhere it's bubbling. But the bubbles in the center glass actually have less drag, less friction on them and they rise more rapidly, more easily than the ones on the side. And the result is they set up a circulation of the liquid. And bubbles are very slowly moving in beer. In fact, if you'll notice, champagne has more rapid moving bubbles than beer bubbles. And we could discuss why that is in a moment. But anyways, the result is that because of the liquid circulation, the bubbled go down initially...

FLATOW: Wow.

ZARE: ...in a glass of Guinness or some of the other very highly carbonated beers.

FLATOW: Well, one last quick question for you, Dr. Zare: Why are some bubbles bigger than others - depending on beverage? Is that what it is?

(LAUGHTER)

ZARE: Oh, I wish I understood all if this. Part of it has to do with the size of the cracker crevice that you have and it's been a mystery to me as to what controls, totally, the size of the bubble. I don't know the answer to that.

(LAUGHTER)

FLATOW: Well, we hope you enjoy finding that.

ZARE: I shall study this.

Police bring crime victim new cell phone | woman, police, beach ...

LAGUNA BEACH ? Police officials are bringing some Christmas spirit to a recent robbery victim on Tuesday, providing her with a new phone to replace one stolen during an attack.

The Laguna Beach Police Employee Association teamed up with the non-profit Crime Survivors organization and Boost Mobile to support the local hairstylist after she was violently attacked while leaving work on Dec. 8.

The woman, who authorities are not identifying because she was a crime victim, was walking from a Laguna Beach salon to her car when she was confronted by two men in a parking garage. The men pointed what turned out to be airsoft guns ? replica firearms that shoot plastic pellets -- at her, and demanded her wallet, said Larry Bammer, president of the Laguna Beach Police Association.

As the woman attempted to keep walking to her car, the men approached her, pressed one of the airsoft guns into her back and fired. The woman fought back as the men grabbed her purse, kicking and screaming before the robbers got her purse and ran away, Bammer said.

The robbers escaped with $100 in cash from the purse, which the woman needed for a month's worth of groceries, as well as a new cell phone, Bammer said. The woman also sustained a serious bruise and welt in the center of her back, where she had been shot by the airsoft gun.

Two of the officers who responded the night of the robbery paid the woman back the stolen $100 from their own pockets. Crime Survivors reached out to support the woman, while Boost Mobile agreed to donate a new HTC cell phone after hearing of the robbery.

Police say the two robbers, as well as a suspected getaway driver, were later arrested in Westminster. Their names were not immediately available.

Though Durning was nominated for a Golden Globe when he played a harried police lieutenant in the 1975 film ?Dog Day Afternoon,? it was his Oscar-nominated role in ?The Best Little Whorehouse in Texas? that critics began to notice Durning?s acting ability.

For example, critics marveled in that a heavyset man was able to be so nimble in the film?s show-stopping song-and-dance number. They were unaware he had been a dance instructor earlier in his career and met his first wife, Carol, when both of them worked at a dance studio.

A year after the movie, Durning was at it again when he received another Oscar nomination. This time, it was for his portrayal of a bumbling Nazi officer in the Mel Brooks? film ?To Be or Not to Be.? Over the course of his career, Durning had won Tony and Golden Globe awards to go with the two Academy Award nominations mentioned earlier. He not only received nine Emmy nominations but was honored in 2007 for a lifetime achievement award from the Screen Actors Guild.

He loved his profession and when he was honored in 2008 with a star on the Hollywood Walk of Fame, he spoke with the Associated Press and told them that, ?I never turned down anything and never argued with any producer or director.?

Unfortunately for Durning, his life growing up was anything but a bed full of roses. Born into an Irish family of ten children in 1923, he grew up in Highland Falls, New York; a town that was near West Point. Having been gassed and losing a leg in World War I, his father was unable to work; so, his mother was force to support the family by washing the uniforms of West Point cadets.

As Charles grew older, he found himself fighting in World War II in which he barely survived. He found himself in the first wave of U.S. soldiers that landed at Normandy during the D-Day invasion. He would be the only member of his Army unit that survived. Though he was able to kill several German soldiers, he later was wounded in the leg by a young German soldier. The soldier bayoneted him and was able to kill him with a rock. ?Later, he was captured in the Battle of the Bulge and was lucky to survive a massacre of prisoners.

In 1994, Durning narrated the Discovery Channel?s ?Normandy: The Great Crusade.? He spoke with USA Today, ?They train you to do awful things, then they release you and wonder why you are so bitter and angry. Scars that you have from wounds heal. Scars that you have mentally never heal.?

He continued by saying ?There?s no nobility with war. It?s tear-?em-up destruction that leaves you frustrated, bitter and angry. ? If you really knew what it was like for an hour, you wouldn?t want anyone to go through it.? As time went on, he refused to discuss his service in the military though he was awarded the Silver Star and three Purple Hearts. He told an interviewer in 1997 that ?Too many bad memories. I don?t want you to see me crying.?

Durning had three children with his first wife before they divorced in 1972. Two years later, he married Mary Ann Amelio, his high school sweetheart. He is survived by his three children, Jeannine, Michele and Douglass. The family is planning a family service and burial in Arlington National Cemetery.

Actor Charles Durning has died at the age of 89. Durning was known as the king of the character actors, for his wide range of roles. He was nominated for two oscars during his long career.

Van-sized space rock is a cosmic oddball

The shattered remains of a high-profile space rock are oddly low in organic materials, the raw ingredients for life. The discovery adds a slight wrinkle to the theory that early Earth was seeded with organics by meteorite impacts.

In April a van-sized meteor was seen streaking over northern California and Nevada in broad daylight. The fireball exploded with a sonic boom and sprayed the region with fragments. Videos, photographs and weather radar data allowed the meteor's trajectory to be reconstructed, and teams quickly mobilised to search for pieces in the foothills of the Sierra Nevada in northern California.

Researchers readily identified the meteorites as rare CM chondrites, thought to be one of the oldest types of rock in the universe. "Because the meteorites were discovered so freshly, for the first time we had a chance to study this type of meteorite in a pristine form," says Peter Jenniskens of the SETI Institute in Mountain View, California, who led the search effort and the subsequent study of the space rocks.

Jenniskens personally found a fragment in a parking lot, where it remained relatively free of soil contaminants. "That's the best you could hope for, other than landing in a freezer," says Daniel Glavin of NASA's Goddard Space Flight Center in Greenbelt, Maryland.

Battered past

CM chondrites make up only about 1 per cent of known meteorites. Most of them contain plenty of organic materials, including amino acids, the building blocks of life on Earth.

Jenniskens and colleagues found that the California fragments also have amino acids, including some not found naturally on Earth. But in three rocks collected before a heavy rainstorm, which bathed the other pieces in earthly contaminants, organics are less abundant by a factor of 1000 than in previously studied CM chondrites.

These three rocks could not have lost organics due to space "weathering": analysis of the meteorites' exposure to cosmic rays suggests the original meteor was flying through space for only about 50,000 years before hitting Earth.

Based on its trajectory and its relatively short flight time, Jenniskens thinks the meteor can be traced back to a family of asteroids dominated by 495 Eulalia, a group known as a possible source of CM chondrites. It is probably a piece that broke off during an impact, revealing the relatively pristine material inside.

So what happened to its organics? Jenniskens' team found that the meteorites are breccia ? smaller rocks cemented together ? which suggests that the asteroid from which they came took a series of beatings. Those impacts, or possibly other processes inside the asteroid, could have heated it enough to destroy most organic material.

Limited delivery

The result might have implications for the organics delivery theory, says Bill Bottke of the Southwest Research Institute in Boulder, Colorado.

"It shows that not all asteroids can deliver sufficient quantities. One of the disappointments is that, from a prebiotic organic chemistry perspective, it was very limited," says Bottke. "But this is an unusual case. Most [CM chondrites] are loaded with organic compounds."

Still, studying the space rocks will help us prepare future missions to asteroids such as OSIRIS-Rex, scheduled to take off for asteroid 1999 RQ36 in 2016 and bring a sample back in 2023.

"In some ways, we've had a sample, a very fresh one, come to us," says Bottke. "This is a test bed for the techniques we'll use in that mission."

Low pH levels can eliminate harmful blooms of golden algae, one cause of massive fish kills

Dec. 20, 2012 ? Baylor University researchers are one step closer to understanding the algae that causes a substantial number of fish deaths in more than 18 states.

Golden algae, Texas Tide or Prymnesium parvum, as it is known by its scientific name, produces toxins that can severely impact aquatic organisms. Over the past decade, golden algae blooms have been responsible for the death of tens of millions of fish in Texas reservoirs.

The study was published in the December issue of Harmful Algae.

Bryan W. Brooks, Ph.D., professor of environmental science and biomedical studies at Baylor and director of the environmental science graduate program and the environmental health science program, and his research team found that neutral pH levels prevented the algae's bloom development and the toxicity of the algae was greatly diminished.

"Our novel findings identify that surface water pH is a very important factor influencing whether harmful algal blooms of Prymnesium parvum will even occur in a lake or reservoir," Brooks said. "In addition to better understanding the ecology and toxicology of this invasive species, this new information promises to support more sustainable environmental management of fisheries and drinking water supplies."

Brooks and his research team conducted two experiments -- one during pre-bloom period and another during bloom development -- over 21 days to gauge the effect of pH 7 and 7.5 on toxicity of golden algae. The study -- in Lake Granbury, Texas, a common site of destructive golden algae blooms -- also included untreated lake water with pH of 8.5.

"In the bloom development experiment, acute toxicity to fish was observed in the untreated lake water (pH 8.5) and in the pH 7.5 treatment level as early as Day 7. However, the pH 7 treatment levels remained free from acute toxicity throughout the 21-day study," said Krista N. Prosser, Baylor environmental science graduate student and lead author of the study.

Researchers can now better identify when and where harmful blooms may occur and develop solutions to minimize the impact of golden algae.

"Because golden algae blooms appears to originate in coves that experience lower inflows than the main reservoir stems, coves may represent more reasonable management units to create refuge habitats and potentially preempt bloom formation," Brooks said.

Golden algae can be found in the following states: Ala., Ariz., Ark., Calif., Fla., Hawaii, La., Maine, Miss., N.C., N.M., Okla., Pa., S.C., Texas, Wash., W.Va. and Wyo.

Okay, so, this thread is nothing fancy, I only made it in order to post a link to a map of Edalser Bria...I drew it months ago and colored it on my computer, so it kind of sucks as far as things go, but it works well enough I think to get a general idea of the world and its layout.

As crazy as it seems, the New York Jets still entered Monday night?s game against the Tennessee Titans with a chance to backdoor their way into the playoffs.

Now those hopes are mercifully gone.

Jets quarterback Mark Sanchez threw four interceptions and lost a fumble late as the Jets fell to the Titans 14-10 on Monday night.

The Jets? (6-8) quarterback situation continues to be an absolute disaster as Sanchez was completely erratic once again. Sanchez completed just 13 of 28 passes for 131 yards. He was intercepted four times, twice by Jason McCourty and twice by Michael Griffin. Sanchez has now thrown ten interceptions in the Jets last four games.

Jets quarterback Tim Tebow was finally given a full series at quarterback in the second quarter. It went pretty much as expected. After running 12 yards for a first down, Tebow carried for one yard, was sacked, took a delay of game penalty and misfired on a pass to Jeremy Kerley to force a Jets punt.

With the Titans (5-9) backed up on their own 6-yard line, running back Chris Johnson took a carry over left guard and broke free into the secondary. He out-raced safety Yeremiah Bell for a 94-yard touchdown to give Tennessee a 7-3 lead. It?s the second 90-plus yard touchdown run of Johnson?s career and sixth touchdown run of 80 yards or more.

The Jets forced a punt with Tennessee backed up deep in their own end that gave New York great field position at the Titans 35-yard line. Four plays later, Sanchez hit tight end Jeff Cumberland for a 17-yard touchdown to take a 10-7 lead.

The lead was short-lived. Jake Locker led the Titans on a seven-play scoring drive on the ensuing possession to retake the lead. Locker scored on a 13-yard run on a sweep around left end to give Tennessee a 14-10 lead.

Yet Sanchez still had two more chances to keep the Jets miniscule playoff hopes alive. The Jets drove to the edge of the Titans red zone before Sanchez threw another backbreaking interception. Sanchez double-clutched and threw weakly down the seam and was intercepted again by Griffin.

A shanked 19-yard punt by Brett Kern gave New York another opportunity with less than a minute and the ball at the Tennessee 25-yard line. This time Sanchez fumbled the snap and Tennessee recovered to end the game.

Johnson finished with 122 yards on 21 carries for the Titans. Locker was 13 of 22 for 149 yards and rushed seven times for 43 yards and a touchdown.

In his first game back in New York, wide receiver Braylon Edwards caught three passes for 47 yards.

After Newtown school shooting, more Americans back tough gun laws

WASHINGTON (Reuters) - The percentage of Americans favoring tough gun regulations rose significantly after the mass killings at a Connecticut elementary school last Friday, a Reuters/Ipsos poll said on Monday.

The poll found that 50 percent of those surveyed after the shootings agreed that "gun ownership should have strong regulations or restrictions." Among those surveyed before the killings the number was 42 percent.

The percentages of Americans favoring background checks on gun buyers and limits on the sales of automatic weapons also increased after the shootings, according the poll.

For the survey, 1,395 people were interviewed online from December 11-13, before the shootings. Another 1,198 people were surveyed after the shootings, from December 14-17.

Twenty children aged 6 or 7 and six adults were killed in the slaughter at the Sandy Hook Elementary school in Newtown, Connecticut. Two more adults also died - the mother of the 20-year-old gunman and the gunman himself, who authorities said shot himself as police responding to reports of gunfire converged on the school.

The massacre has led President Barack Obama and some congressional leaders to reconsider what has been a largely hands-off approach to gun control in recent years. Obama and Senate Majority Leader Harry Reid, a fellow Democrat who has been reluctant to back gun restrictions, have said that more must be done to prevent such tragedies.

The Reuters/Ipsos survey found that the percentage of Americans who strongly supported "laws requiring background checks before allowing the sale of a firearm," rose by 7 points, from 77 percent before the shootings to 84 percent afterward.

The percentage who strongly supported "laws limiting the sale of automatic weapons (such as machine guns)," increased by 6 points, from 54 percent before the shootings to 60 percent afterward.

Adam Lanza, the gunman in the school shootings, carried three guns, including a semi-automatic rifle.

U.S. lawmakers have not approved a major new federal gun law since 1994, and a ban on certain semi-automatic rifles known as assault weapons expired in 2004.

The questions polled before the shootings had a credibility interval, which is similar to a margin of error, of plus or minus 3 percentage points. Those done after the shootings had a credibility interval of plus or minus 3.2 points. (Editing by David Lindsey and Jackie Frank)
